Domaine aux Moines

France, Savennières

Since 1981, Monique Laroche and now her daughter Tessa have been making elegant wines on the entire Roche aux Moines, in the Savennières appellation, located in Anjou, in the Loire Valley. The 12 hectare estate on hillsides made up of schist, sand and clay, facing the Loire River, benefits from a particular microclimate and ideal exposure. Chenin vines of more than 45 years old, which are grown next to young 10 year old plants, have been cultivated in organic agriculture and according to biodynamic practices for a long time and have been Ecocert certified since 2009. After the harvest and the numerous hand sorting, the grapes are pressed long and delicately to obtain high quality musts. They ferment in stainless steel tanks or in barrels with indigenous yeasts and are matured in old 220 and 400 liter foudres and then 6 more months in stainless steel tanks, with little filtration, no fining and no addition of sulfur. They tend to create a dry, mineral chenin that can age for a long time. The old vintages are a wonderful example of this!
