La Cave Apicole
France, MontnerSylvain Respaut, a beekeeper based in the Agly valley, has joined forces with the winegrower Olivier Cros to create the Cave Apicole and produce natural fruity wines, natural mead and wild flower honeys. On the beautiful terroir of Fenouillèdes, the two passionate people have been cultivating vines in organic farming without pesticides, fertilizers or synthetic products since 2011. In the old cooperative cellar of Montner, they make wines from different local grape varieties, some of them even centenarian, such as Muscats and Macabeu for the whites, and Carignan, Grenache noir, Syrah and Lladoner pelut for the reds. After a harvest that is always manual, a natural and minimalist vinification is carried out. Fermentations are spontaneous in fiberglass vats or in barrels with ambient indigenous yeasts. The ageing is done in old casks or barrels of several passages for a few months, without filtration, without fining and with little or no added sulfur. They thus produce 100% natural, fruity and light wine, real thirst-quenching wines!
