San Polino
Italy, MontalcinoThe San Polino estate, founded in the 10th century under the protection of the Sant’ Antimo Abbey, has been run for 25 years by the Fabbro and Gjilska families. On eight hectares of Sangiovese vines, spread over three parcels in San Polino and north of Montalcino, the vines thrive at altitudes of 350 to 450 meters, on a variety of soils ranging from calcareous schist to clay and mineral rock. Promoting radical organic farming, the estate takes a holistic approach to viticulture. By respecting and restoring biodiversity, they make their own compost from natural materials, and avoid the use of chemicals and sulfur to preserve the ecological balance. Their method favors a natural fight against parasites, guaranteeing healthy grapes. The estate collaborates with scientists to constantly improve their viticultural techniques. A new project involves spraying microbiological mixtures based on forest humus and green compost to recreate a forest microbiological harmony. This innovative method aims to protect vines from pathologies without disturbing the natural ecosystem. In the north-east of Montalcino, four hectares of vineyards at an altitude of 350 metres produce juicy, fleshy grapes for their prestigious Brunello di Montalcino and Rosso di Montalcino. To discover the wines of San Polino is to be exposed to true expressions of the Montalcino terroir, produced by a viticulture that respects nature.
